I just spent the most idyllic weekend in Sweden on the charming island of Fiskebäckskil. We flew out to Gothenburg on Friday night and sped up the West coast in time for a relaxed family dinner before a weekend of island fun… Wandering down to the jetty to dive into the clear Swedish water, heading out into the bay on the sailing boat, nipping down to the local store to pick up fresh heritage tomatoes, nectarines, prosciutto and mozzarella for the most delicious summer salad, before heading back to the summer house to prepare for an evening of fun with friends. The boys brought over the most amazing selection of meats from their estate which they expertly prepared and barbecued. The most deliciously tender venison I have ever tasted, bowls and platters of fresh summer salads, and bottle after bottle of icy cold rosé… Heaven in the endless Swedish sunshine.
